The regional Italian cuisine of Alba is based upon the years Chef Feldman spent living and working in Piedmont, Emillia-Romagna, and Tuscany, as well as the time he has spent working with this country's greatest regional Italian chefs. It is a balance between the traditional and the creative sides of the Italian kitchen, with an emphasis on great ingredients and the simplicity necessary to appreciate them.
Alba offers an ever changing menu with an emphasis on seasonality and Colorado ingredients, whenever possible. Chef Alex creates everything in-house, from the pasta and pizza dough to the ricotta, mozzarella, pancetta and other cured meats. Alex even makes our limoncello.
