Alba's menu changes seasonally, to take advantage of the best produce, meat, and seafood available at any given time. Chef Keesy buys from local farmers and artisans whenever possible, creating his daily specials based on the freshest and best looking ingredients he can find.
The menu's emphasis is on the diverse regional cooking of northern Italy, particularly Piemonte, one of the richest and most diverse regions. The flavors are clear and straightforward, characteristically Italian, with distinctive refinements that set them apart.
